Sous-vide cooker prepares recipes using steam

For the purpose of better explanation of the gadget, we assume that you are new to Sous-vide. These French words literally mean “under vacuum,” the process includes cooking of food placed in airtight plastic bags.

Why is food placed in vacuum-sealed bags?

The technique was first employed in 1799, the method was re-discovered in 1960s and gained a lot of popularity after 1974. The method is employed to cook food properly, so that it retainsmoisture, does not overcook from the outside but cooks properly from the inside.

The food items, meat or vegetables are placed in airtight plastic bags, which are kept in steam or a water container. The arrangement is temperature controlled, the food items are kept at a relatively lower temperature than used for cooking them. Usually the time for which these are kept in the arrangement is much more than their normal cooking time.

The gadget

Designed by Electrolux the sous-vide cooker is nicknamed Athmos.This gadget will cook food using steam as per the sous-vide technique. The gadget is however designed for domestic use, prepares for a maximum of six persons.

The gadget consists of several parts;the base of the device is fixed to a ceramic container. Below the ceramic container is the electronic circuitry and inside the container is the heating element. A metal tank is fixed above the ceramic container, to hold water that would turn into steam.

There is a perforated metal sheet to be placed on top of the metal container. The food is kept above this sheetwith the help of a silicone food support. Studded with temperature and humidity sensors the injection molded lid cover the food.

The working of the cooker is extremely simple and helps in cooking a variety of sous-vide recipes. Food to be cooked is secured in the plastic bags. With the help of the electric pump that comes along with the equipment, seal the food in vacuum.Pour water in the container and cover it with the perforated metal sheet. Place the silicone food stand along with the food on the perforated sheet, place the lid on top and switch the appliance on.
